Meatloaf A La Paula Dean

My good friend Nicole suggested this meatloaf recipe by Paula Dean when I asked for a good meatloaf recipe, so I decided to try it! It was super easy even though I don't really good or even made meatloaf before. It was yummy, and cheap to make! Follow the recipe below :

Preheat your oven: 375 degrees F (I always forget this part for some reason!)

Gather your ingredients:


1 pound ground beef
1 1/4 teaspoons salt
1/4 teaspoon ground black pepper
1/2 cup chopped onion
1/2 cup chopped bell pepper
1 egg, lightly beaten
8 ounces canned diced tomatoes with juice
1/2 cup quick-cooking oats

Topping:
1/3 cup ketchup
2 tablespoons brown sugar
1 tablespoon prepared mustard

Mix all meatloaf ingredients well and place in a baking dish. Shape into a loaf, or put meat in a loaf pan like I did!

Topping:
Mix ingredients for topping and spread on loaf.

This is what it looks like before it goes in the oven:

Put it in the oven for 1 hour ( I think for high altitude, like me, need an additional 10 minutes)

Voila, this is what it looks like an hour later! I really need to work on my food photography :)

It was really yummy! Serve it with a side of potatoes and dinner is ready to go! Try it sometimes :)
